HOMEMADE KETTLE CHIPS

Homemade Kettle Chips are so easy to fry up, they taste incredible and are super cheap to make. Just three large potatoes will make as much as a family sized bag of store bought chips. Homemade Kettle Chips taste nothing like chips bought in a bag and I promise you, once you fry up a batch you will never grab a bag at the store again.

I like to make a big batch, divide them into several baggies, and freeze until needed. I just take them out of the freezer, pop them in a hot oven for 5 minutes or into a pot of hot oil for two minutes, just long enough to re-crisp.

Making your own Homemade Kettle Chips insures there are no preservatives and lets you control the amount of salt you add, if any.

At my house they are always a favorite with burgers, as a snack or piled high on a platter for a tailgate party. My family loves them with my homemade dipping sauce. (Dianna’s Dipping Sauce – you can find the recipe in the Dips section under Cabin Cooking.)

Wash potatoes and remove and discard ends. Slice potatoes using a mandolin slicer (I got mine at Wal-Mart for under ten dollars and I use it all the time.) Or slice with a knife as thin as possible.

Fill a large bowl half full of ice water. Add 1/4 cup of white vinegar and 2 tsp salt, toss in potatoes and soak for at least thirty minutes. This will remove the starch and help the chips to be crispy and not limp after frying. It will also keep them from turning brown.

Rinse potatoes with cold water to remove vinegar and salt. Shake off any excess water. Line counters with paper towels. Lay potatoes out in single layer to dry. In a deep cast iron skillet, deep fryer or kettle heat four inches of oil. Oil is hot enough when a drop of water dances on the surface. Add potatoes one chip at a time to hot oil.

With slotted spoon flip chips after two minutes. Fry until desired darkness. Remove from oil onto paper towel lined tray. Salt to taste.  

Add a twist to your chips – while still hot sprinkle with pepper and parmesan cheese or bbq seasoning.
